When pizza chains came in, we don’t do pizza the way they do it in Rome where it’s a little sprinkling of cheese and maybe no cheese at all on some of the pizzas. In the United States it’s got to be ¾ of an inch of yellow asphalt all over the top. And the amount of cheese in our diet has gone way, way up. And the reason I’m going to say the cheese is fattening is it’s 70% fat- very high in calories and I think that’s really the problem.

When we look at everything from weight issues to inflammatory conditions like sore joints or migraines we find that there are substances in cheese that might actually be the culprit in these.
Giving up cheese would be hard for a lot of us but there are alternatives.
There are vegan cheeses out there and there are several of them that taste just great. In fact I was at a major grocery store and they recently took one of the vegan cheeses and they said we’re not putting it in the vegan aisle anymore we’re putting it in the regular cheese aisle because to us this is cheese. And I bought it and it tasted terrific.
